Strawberry Delight

When it comes to cooking, there are two things that I love: slow cooking and semi-homemade recipes.  So today on While I Was Busy Thinking, I am sharing a semi-homemade recipe that one of my former students shared with me. Like me, she is now an educator, a wife, and a mommy, and we are always talking about the food we make for our families. She has become one of my greatest joys because there is nothing better than being able to transcend the teacher-student relationship and enter a new one: lifelong friend.

So about a month ago, she bragged about the best strawberry cake she’d ever made. I immediately sent her a message asking for the recipe.  She was so cute, she said that while the cake was pretty easy, she got adventurous and made her own “strawberry cream cheese frosting.  I looked it over, and filed it under my 28 Ways To Show Love! So today, I’m sharing it with you, and it’s coming to you just in time for Valentine’s Day! We actually ate it for breakfast!

While I admit, I am more of a slow cooker than a baker, this semi-homemade cake makes me look like a real-deal cake boss!

So here’s what you need:

Cake Ingredients
Yellow cake mix
4 eggs
1/2 cup milk
strawberry jello (gelatin)
1 cup pureed strawberries (she used fresh; I used frozen)
3/4 cup cooking oil
**Beat eggs by hand in a bowl for a bit then add them in the bowl with everything else**
Follow the cooking directions on the box, but I cooked my cake for about 26 minutes (or the tooth pick test) on 325.
While the cake is cooking, make your frosting.  It is divine! You will need to use your mixer!
Strawberry Cream Cheese Frosting
1 Stick of butter beat
1 Block of cream cheese
1 tsp vanilla
2 cups powdered sugar
1/2 cup strawberry puree

I recommend that you refrigerate cake afterwards, but most of all, I recommend that you enjoy this sweet treat with the people you love, and make every sweet moment count!
