I am sure that I have mentioned more than once here on the blog that I love slow cooking. It’s easy, and it helps me when I am in a crunch for time. Now that the baby is here, I know I’m going to be getting a lot more use out of my slow cooker especially since I have new demands of my time. And what better time to put it to use than Super Bowl weekend. So this weekend, I am going to be trying one of the recipes that I recently found on Redbook.com: 50 Slow Cooker Recipes. This one comes from I Love My Disorganized Life, and as soon as I saw it, I knew that I had to try it. It’s Slow-Cooker Lasagna Soup.
Rachel over at I Love My Disorganized Life used spicy Italian Sausage and ground turkey, but I used mild Italian sausage and ground beef. I didn’t want my soup to be too spicy because I wanted everyone in my family to enjoy it, and I actually don’t use turkey for my pasta dishes (but I do use it for tacos and chili). I am happy to report that it’s delicious. My 6 yr. old especially thought so, but it might be due to her newfound obsession with Garfield thanks to Netflix.
This soup takes a fraction of the time to prepare unlike traditional lasagna, and while I have to admit that even though I love lasagna, it can be a little too time consuming to make. This soup on the other hand is super easy to make and it is very tasty, so if you need to add another recipe to your meal rotation, this one is a keeper. Just add some Mozzarella and Parmesan cheeses and some garlic bread, and dig in!
